- thortful reveal three recipes that celebrate the avocado and go way beyond the avo-toast
Avocados, the staple of every brunch and possibly the reason why millennials will never be able to afford a home?(1)
Love it or hate it, this delicious fruit boasts high nutritional value all thanks to its high content of vitamins and minerals. And hey, if you don’t want to eat it, you can always use it as a face mask, like many A-list celebs do (looking at you Mrs. Beckham).
But all that glitters is not gold… avocados are some of the least sustainable fruits out there, bearing the weight of a heavy carbon footprint. So to make sure you keep enjoying your favourite healthy fat and not negatively impact the earth, you might want to consider growing your avocado plant at home. Luckily thortful.com will launch a growing kit soon, which will feature a handmade ceramic avocado starter (available in different finishes) and a handy, hand-drawn booklet to share all your hard-earned avocado growing knowledge. Just add a jar and an avocado pit and you’re good to go.
Now you are all set to watch your avocado plant grow beautifully. But for those who just can’t wait to eat some avo-goodness, here are the top 3 recipes that go way beyond the classic avo-toast.
Avocado Ice Cream
If you’re wanting some avocado goodness that is perfect for the summer time – avo-ice-cream will be perfect for you.
Add 2 large ripe avocados to a blender with a few splashes of coconut milk and a hearty squeeze of honey. As you blend add a pinch of salt and a teaspoon of peppermint extract. Add in some chocolate chunks and freeze!
Chocolate Avocado Pudding
Fancying some chocolate avo-indulgence? A chocolate avocado pudding might be the perfect recipe for you.
Take a large avocado that is perfectly ripe, 2 tablespoons of cocoa-powder, 50 grams of melted dark chocolate, and 30ml of oat milk. Blend these and add a squeeze of honey, a splash of vanilla extract and a pinch of salt. Blend again until smooth and enjoy!
Potatoes are old school. Next time you’re dancing fries, pick up an avocado and make this yummy recipe!
Preheat your oven to 200 before slicing 2 avocado into chunks that resemble potato wedges. Give the avocado a squeeze of lime and then coat in flour, egg wash, and panko breadcrumbs respectively. Pop in a baking tray with a drizzle of oil and bake for 15 minutes!
